Simple Whole Wheat Bread

Ingredients
                    (1)  3 cups warm water (110 degrees F/45 degrees C)
                    (2)  2 (.25 ounce) packages active dry yeast
                    (3)  1/3 cup honey
                    (4)  5 cups bread flour
                    (5)  3 tablespoons butter, melted
                    (6)  1/3 cup honey
                    (7)  1 tablespoon salt
                    (8)  3 1/2 cups whole wheat flour
                    (9)  2 tablespoons butter, melted

Directions
                                                (1)                                                               In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30minutes, or until big and bubbly

Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky  just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.

Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.

Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake.Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely

Spicy Fried Rice

                                                        Spicy Fried Rice

 Ingredients:

                   (1) Oil 15 ml
                   (2) Shrimps 80 gms
                   (3) Chicken fillet 50 gms
                   (4) Steamed rice 300 gms
                   (5) Chopped spring onion 25 gms
                   (6) Eggs 2
                   (7) Chilli sambal 85 gms
                   (8) Oyster sauce 15 gms
                   (9) Sweet soy sauce 25 ml
                  (10) Salt and Whit pepper 2 gms

Method:
              
     (1). Heat oil in a wok and saute chicken and shrimp till cooked.
     (2). Remove from the wok.
     (3). In the same wok, pour egg and saute till cooked.
     (4). Add rice, chilli sambal, soy and oyster sauces.
     (5). Mix and then add chicken and shrimp
     (6). Cook until thoroughly heated.
     (7). Garnish with spring onion and serve.

Chicken Shami Kebab

Ingredients:
              
                 (1) 1/2 kg boneless skinless chicken breast
                 (2) 100 g grams lentils
                 (3) 1/2 teaspoon cumin seed (Sufaid Zeera)
                 (4) 15 g red chilies, pods (Saabut Lal Mirch)
                 (5) 1 black cardamom pod (Bari Kaali Ilaichi)
                 (6) 10 black peppercorns (Kaali Mirch)
                 (7) 2 garlic cloves (Lehsan) 
                 (8) 1 inch piece cinnamon stick (Dal Cheeni)
                 (9) 1 inch piece gingerroot (Adrak
                        (10) 1/2 teaspoon coriander seed (Saabut Dhania)
                (11) 1 egg (beaten)
                (12) salt (to taste)
                (13) oil (as needed, for shallow frying)
 
Directions:       Prep Time: 20 mins         Total Time: 1 1/2 hrs
                    
(1)   Pour 3 cups of water in a pan, add chicken, washed lentils, all of the dry spices, ginger, and garlic. Boil mixture on medium heat until the meat becomes tender.Check that the mixture is just about dry. Remove from heat. Let it cool.

(2) Grind chicken mixture in a food processor.

(3) Break off 1 tablespoon of the mince paste, wet your palm and place it in the center of your palm. and make into round shape and then flatten each ball in the palm of your hand.

(4) Repeat this with the remaining mince. Heat a heavy based frying pan and add just enough oil to cover the surface.beat the egg and Coat the kebabs with the egg .Add 3 to 4 kababs at a time and fry on low heat to a crisp golden color on both sides.
